Our Pollo a la Brasa : It is a classic Peruvian rotisserie-style chicken that’s quite flavorful. It is one of the most eaten dish in Peru finds its origins in the capital city, here in Lima. You can Macerate the Chicken (2 kg) with an envelope of 100 grams of Piki dressing dissolved in a cup of liquid preferably 1/2 bottle of beer. Then place on the grill.
